Biancavigna is a very small player in Prosecco and was recently described as “Conegliano’s emerging winery” by Gambero Rosso, the foremost guide on Italian wines. One of the key reasons for this was their ecologically-conscious approach to winemaking. Biancavigna’s approach to making Prosecco is rather unique: they own all their own vineyards (a rarity, just as it is in Champagne), which allows them to control the entire process and create genuine sustainability. Their vineyards are grown with minimal intervention, many of them now certified as Organic, all tended and harvested by hand. However, their environmental conscience goes well beyond the liquid itself, with a new winery finished in 2015 made entirely out of recycled or local sustainable materials and powered by solar panels, and lighter glass bottles to further reduce the wine’s carbon footprint.
